Today represented my last day of “summer…” well, kind of. Tomorrow starts off workshop week for teachers. I will have Friday off to attend our fabulous Minnesota Get-Together, the State Fair. (I worked a day last week and traded for the time off.) . Labor Day weekend will also be spent with friends and my family….. but tonight, I get to have that excitement/will I get everything done/oh my gosh where did summer go feeling.
Time sure flies. But, we really had a wonderful summer. I loved my days home with the boys. I loved our 3 trips we took. LaCrosse, WI, our DC trip, and our week in IL with my family. All hold such special memories.
So, today, my last day of summer…in a few pictures.
That 1st photo was snapped proudly at Urgent Care this afternoon. Look at that awesome blood pressure! The 2nd photo is a pic of my hives running down my legs (which is why I was at Urgent Care). The 3rd picture is of Kirby… the doctor put me on steroids and warned my family I may get crabby… but how can I get crabby at that face? The 4th picture is a pic of my keto-lunches I made today (Bacon wrapped Chicken Breasts with honey mustard, mushrooms and cheddar cheese = AMAZING!). Picture 5: Already packed for the week – just have to add my veggies. The sixth picture is our most favorite summer meal…. homemade bruschetta from our garden served over garlic rubbed grilled bread drizzled with olive oil and sprinkled with kosher salt….served with a sprinkle of fresh basil leaves on top. Heaven. Picture 7: I even ate a slice or 2 of bread and broke my keto-diet….and it was worth it. You gotta have some leeway when you are eating heaven. Picture 8: my keto version – bruschetta served on parmesan whisps. Also heavenly. Picture 9: Punky. I love this kid too. He and his brother keep me and Hubby grounded in life and gratitude.
