Some yummy-ness!

So, AJ makes the BEST creamed spinach at Hill family parties….and I have made it many times at Schad functions.  Today, I uncovered a cookbook I had bought back in October…and found a yummy creamed spinach recipe— for only 90 (yes, that was NINETY) calories per serving (and from 22 grams of fat to 5.3 grams!)

1 tablespoon butter

3 garlic cloves, minced

2 large shallots, chopped fine (about 1/3 cup)

salt and freshly ground pepper

pinch of ground nutmeg

12 oz baby spinach

1 teaspoon cornstarch

1/3 cup Greek yogurt

Heat a large nonstick saute pan over medium heat.  Add teh butter and garlic to the pan, and when it has melted, add the garlic and shallots.  Season with salt, pepper and a pinch of nutmeg.  Cook, stirring often, until the shallots are tender, about 4 miniutes.

Raise the heat to high and add half the spinach.  Season it lightly with salt and pepper.  Toss and stir the spinach as it cooks down.  When there is enough room in the pan, add teh remaining spinach.  Continue to cook, stirring often, until teh spinach is tender, about 3 minutes.

Sprinkle the cornstarch over the pinach and stir until combined.  Continue to cook the spinach until the liquid has thickened, about 1 minute.  (I really didn’t have much liquid)

Remove the pan from the heat.  Add the yogurt and stir to coat teh spinach.  Season with salt and pepper to taste, if desired, and serve.

Tasty!  (I still will enjoy my annual Spincah casserole at Grandma’s house on Thanksgiving…….but this will help me when I have the taste for it during the year!)  Enjoy!
